Perfect Homemade Banana Bread

I had some really ripe bananas, so I took a regular banana bread recipe I had and changed it up a bit. My husband and I tried it and couldn't tell a difference from the original recipe. It was super yummy with some added Earth Balance Butter on top. This recipe is a keeper!

Banana Bread Recipe:
  • 1/2 cup Earth Balance Butter
  • 1/4 cup vegetable oil
  • 3/4 cup maple syrup (make sure it's the real thing....i used organic 100% maple syrup from Wholefoods)
  • 1/2 cup brown sugar
  • 2 eggs substitute (I used 4tbs. ground flaxseed with 6tbs. water together....let sit 2-3min before putting it in the recipe)
  • 1 1/2 cups ripe mashed bananas
  • 1 tsp. vanilla extract
  • 2 cups flour (I used white all-purpose, but you can also use some wheat flour)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • additional brown sugar for top of batter
  1. Mix together butter, oil, brown sugar, maple syrup, and eggs.
  2. Add mashed bananas, vanilla and stir together well.
  3. Mix in flour, baking soda and salt, stirring until it is blended well.
  4. Pour into 1 greased large loaf pan.
  5. Sprinkle with additional brown sugar generously over top of batter, using your hand to gently pat some of it into the batter.
  6. Bake at 325 degrees: large loaf pan for about 1 hour. Be sure to check a bit before.
  7. Allow bread to cool in pan for 20 min.
  8. You can change up the recipe by adding any of the following: Miniature chocolate chips, shredded coconut, chopped walnuts, or even some macadamia nuts.
