Flaxseed

This is one of my favorite egg replacers when baking. I mix 1-2 tbs of ground flaxseed with 3 tbs of water and let it sit for 2-3 min before adding it into my batter of whatever I'm making. Flaxseeds have way more nutrition than eggs and here's why.........
Some call it one of the most powerful plant food on the planet. These seeds contain high levels of dietary fiber including lignans (which acts as an antioxidant), an abundance of micronutrients and omega-3 fatty acids. Flax seeds may lower cholesterol levels, especially in women. Initial studies suggest that flax seeds taken in the diet may benefit individuals with certain types of breast and prostate cancers. A study done at Duke suggests that flaxseed may stunt the growth of prostate tumors, although a meta-analysis found the evidence on this point to be inconclusive. Flax may also lessen the severity of diabetes by stabilizing blood-sugar levels.
