Homemade "beef" Seitan

I wanted to find a cheaper way of having my "meat" so I used the recipe from "La Dolce Vegan" by Sarah Kramer. Even my neighbor was asking what we were cooking because it smelled so awesome.

Basic Instant Gluten (Seitan)
1/2 cup instant vital wheat gluten flour
1/2 cup water
In a medium bowl, stir together the wheat gluten and water until it becomes elastic. Knead for 5 minutes and set aside. It may look like there's not much, but it will double in size once it's cooked in broth.
"Beef" flavor Broth:
2 cups water
1/4 cup tamari (it's like a soy sauce)
2 tsp vegan Worcestershire sauce
2 tbs nutritional yeast
1 tsp onion powder
1/2 tsp cayenne pepper
1/4 tsp dried sage
In large saucepan, bring all of the broth ingredients to a boil. Slice gluten into steaks, chunks or strips and drop carefully into broth. Reduce heat and cover with lid. Let simmer for 50-60 minutes, stirring every 10 minutes. Use "beef" immediately in your dish of choice or store in the fridge for up to 6 days or freezer for up to 6 months. For a chewier texture, once you've boiled the "beef," bake it at 350 degrees in a lightly oiled baking dish for 30 min.
Makes 2 large or 4 small servings.

It was full of flavor and had a bit of a kick to it. I think I should cook it in the oven after for a better texture.
